Who says popsicles are just for kids? This simple little recipe from my cookbook Eat Green Get Lean is a delicious way to get in a couple servings of fruit every day.
Try other fruit combinations as well–peach, mango, kiwi, banana, and raspberry are some of my favorites. Enjoy!

2 cups fresh strawberries
1/4 cup frozen cranberry juice concentrate, thawed
1 teaspoon stevia or other natural sweetener
1 tablespoon lemon juice
3 tablespoons water
In a blender or food processor, add the strawberries, cranberry concentrate, stevia, lemon juice, and water and process until smooth.
Pour the mixture into 8 popsicle molds or small paper cups. Place in freezer until they begin to set, about 1 hour. Insert popsicle sticks and place back in freezer until completely set
